Ramp and Almond Pesto

We sustainably foraged wild ramps — elusive wild leeks — in a quiet patch of park about one hour from New York City. 

Then, we cleaned and processed them into a pungent paste with piles of basil, deeply toasted almonds, plenty of great olive oil, sharp pecorino romano and 36-month parmigiano from Murray's Cheese,  and fresh lemon juice.

This jar will turn a pack of spaghetti into a very memorable meal for 4-6 people. Alternatively, consider dolloping it atop brothy beans, fried or soft boiled eggs, rice or barley...the possibilities are endless. Please note that if you cook it more than 3 or 4 minutes, the fresh garlicky flavor will quickly become muted and sweeter.

If you won't use it soon after receiving, freeze it in an ice cube tray to create little pucks of flavor for use throughout the year.

8oz. Refrigerate after opening. Ingredients: ramps, basil, toasted almonds, pecorino, parmigiano reggiano, olive oil, and salt. Contains tart ascorbic acid (Vitamin C) to assist with preservation — but eat it soon for optimal flavor!
