Our ideal, golden version of a New York mustard. Not too spicy. Very mustardy. A mix of coarsely and finely ground mustard seeds, hydrated in ice water until moderately spicy, then cut with champagne vinegar, fresh horseradish, lots of turmeric, sea salt, and a pinch of brown cane sugar.
